Day Eighteen

heres the breakdown.

6:20 am.

Blood Sugar - 107
Meds
1 Glipizide
1 Multi Vitamin
1 Lisinopril

7:00 am. - Breakfast
1½ cup Shredded Wheat Miniatures
½ cup fat-free soy milk
2 cups Coffee - Pecan

1:30 pm. - Lunch
1 32oz. Sugar-free raspberry ice Tea
1 Can Bumble Bee - Chunk White Albacore, in water
2 Tbls fat free plain yogurt
1 Tbsp grated Parmesan cheese
4 slices 100% whole wheat bread
2 serving Glenny's Low Fat Soy Crisps - white cheddar

6:45 pm. - Meds
1 Glipizide

7:15 pm. - Dinner
½ cup Vigo Yellow Saffron Rice
½ cup cooked frozen green peas
½ cup cooked corn kernels 1
2 cup arugula
2 cup spinach
2 tsp shredded Parmesan cheese
1 cup sweet red pepper
2 tbsp Ken's Lite Steak House Italian
2 tbsp Starvin' Lou's Clementine & Lime Dressing
8 oz. Starvin' Lou's Lemon Pepper Chicken
Starvin' Lou's Lemon Pepper Chicken (recipe)

32 oz Chicken breast, skinless, boneless, raw
6 Tbsp black pepper
1 Tbsp canola oil
½ cup fresh lemon juice
1 Tbsp fresh lime juice
½ cup water
1 Tbsp lime zest
2 Tbsp lemon zest

Instructions
Trim all fat from chicken breasts and pound them thin, about 3/8 of and inch. Salt and pepper both sides of

the now flattened chicken and pan seer then set aside to cool. (this could also be prepared on a grill.)

Mix remainder of ingredients in a large freezer bag and add cooked chicken once it has cooled. allowing

chicken to marinate.
Heat and serve.
